If you are lucky enough to live by a Cafe Rio, you know how amazing their food is. It’s probably one of my favorite places to eat. My absolute favorite thing there is the pork salad. . . . I am in love with it.
You can find copycat recipes all over the internet. I have a copycat recipe for their pork that I make all the time but I came across this copycat recipe for their chicken the other day and decided to give it a try. It’s been so long since I’ve had their chicken, that I honestly couldn’t tell you if this tastes just like it, but I can tell you it is so delicious.
There are so many reasons you will love this . . . the flavor is amazing, it’s so fast and simple to throw together, when it’s 105 degrees outside you don’t have to turn on your oven because it’s made in your crockpot and even your pickiest eaters will devour it.
I made up a batch of Cafe Rio dressing and we made tacos and salads with this. This is so good anyway you serve it . . . in tacos, salads, burritos, etc. You’ve got to try this.
- 2 lbs chicken breasts
- 1/2 cup Zesty Italian dressing
- 1/2 Tbsp. minced garlic
- 1 pkg. ranch dressing mix (3 Tbsp.) (mixed with 1/2 cup of water)
- 1/2 Tbsp. chili powder
- 1/2 Tbsp. ground cumin
Place all ingredients in a crock pot. Cook on low 5-6 hours or until chicken is done and shreds easily.
Shred with fork and serve in salads, burritos, tacos, etc.
