This peppermint ice cream is to die for.
It is heavenly.
It is amazing scooped on top of a brownie and then drizzled with hot fudge.
It is perfect peppermint ice cream. The peppermint flavor is spot on — absolutely amazing! Not to strong, not to weak.
I know that some people have an aversion to eating things with raw eggs. So right now you might be a wee bit paranoid to make this ice cream. But trust me folks, I have eaten A LOT of this peppermint ice cream (and chocolate chip cookie dough) throughout my life and I am still alive and kickin’!
Get ready to be in LOVE with this ice cream. It rocks!
- 3 cups sugar
- 2 eggs
- 3 cans evaporated milk
- 1 pint cream
- 2 cups milk
- 1 pkg (10 oz) peppermint candies (like the Brach's)
Place unwrapped peppermint candies and one can of the evaporated milk in blender. Blend until smooth and the candy is crushed.
In large bowl beat eggs until light and fluffy. Mix in sugar, whipping cream, milk and the rest of the evaporated milk . Add peppermint milk mixture. Mix until well blended.
Pour into ice cream canister and freeze according to manufacturers directions.
