We chilled at home, worked in the yard and enjoyed every second of this beautiful weather we’ve been having. (I’m sure I just totally jinxed the weather and it will probably snow here tomorrow.)
We celebrated Cinco de Mayo with quite the spread of yummy Mexican food. I made ground beef tacos, restaurant style refried beans in my Instant Pot, Mexican rice, guacolmole, queso and of course tres leches cake. If you haven’t tried that cake on my site, you absolutely need to. It’s out of this world.

This week’s menu includes one of my all time favorite pasta salads in the history of ever! It’s seriously crazy good and so pretty to look at, and the crumb cake, well the picture speaks for itself.
