This Over The Top Chocolate Chex Mix has it all! Chocolate Chex, mini peanut butter cups, marshmallows drizzled with caramel and milk & white chocolate. It’s completely naughty, evil and irresistible!
I first posted this recipe almost six years ago and decided it is most definitely worthy of a repost and new pictures.
It’s sadly been buried away deep in my archives and probably not seen by many of you. With the Super Bowl just two days away, I thought this is the perfect indulgent treat that you absolutely need at your party.
Funny story about this stuff.
I saw this all over Pinterest several years ago, but it was called Better than Sex Chex Mix.When I posted this back in 2012 my three youngest boys were 8, 10 and 12 and I didn’t want to be posting any recipe with “better than sex” in it’s name. I remember thinking what will they think if they see this post . . .I’ll be so embarrassed (lol!).
I guess I was trying to keep my boys naive and innocent, and sheltered from the outside world. I know, I’m kind of lame.
So I took the liberty of changing the name and even six years later I’m sticking with it. . . Over the Top Chocolate Chex Mix.
Trust me when I tell you that name fits it perfectly, but you can call it whatever you want.
This stuff is so sinful and no one should be left alone in a room with it, especially not me.You might want to give this a trial run today before you make it for your Super Bowl party, you know, just to make sure you like it ok.
Just remember I’ve warned you about how sinful this is, so please no hating me when you realize you’ve eaten half the pan. Don’t worry, I won’t judge you.
- 8 cups Chocolate Chex cereal
- 3/4 cup brown sugar
- 6 tablespoons butter
- 3 tablespoons corn syrup
- 1/4 teaspoon baking soda
- 1 cup mini Reese's Peanut Butter Cups* (they come in a bag)
- 1 cup mini marshmallows
- 20 caramels, unwrapped
- 1 1/2 tablespoons heavy cream
- 1/2 cup milk chocolate chips
- 1/2 cup white chocolate chips
- 1 teaspoon coarse sea salt (optional)
Pour measured cereal into a large microwaveable bowl. Line cookie sheet with waxed paper
In 2-cup microwaveable measuring cup, microwave brown sugar, butter and corn syrup uncovered on high for 1 minute, stir and cook for 1 more minute.
Stir in baking soda until dissolved.
Pour caramel mixture over cereal, stirring until evenly coated. Microwave on high for 3 minutes, stirring every minute. Spread on cookie sheet. Cool 10 minutes. Break into bite-sized pieces.
Make sure Chex mixture is cool to the touch because you don't want the candy to melt. Sprinkle mini peanut butter cups and mini marshmallows over the Chex mixture.
In a small microwaveable bowl, microwave unwrapped caramels and cream on high for 1 minute. Stir until smooth (you may have to microwave it for a little longer, do it in 15 second increments). Use a spoon or fork to drizzle over Chex mixture.
Microwave milk chocolate chips in 30 second increments, stirring after each, until smooth. Using a spoon drizzle the chocolate over the cereal mixture.
Microwave white chocolate chips in 30 second increments, stirring after each, until smooth. Using a spoon drizzle the white chocolate over the cereal mixture. Sprinkle with sea salt, if desired.
Allow chocolate to set until hardened. (You can put in the the fridge to speed things up). Break apart and store in airtight container.
I sometimes use both the white and chocolate mini Reese's peanut butter cups.
Once I melt the chocolate chips, I usually spoon/pour the melted chocolate into a small ziploc sandwich bag and then snip a corner and then pipe it on. I think it's a lot easier than drizzling on with a spoon. I take a small cup and put my ziploc bag inside the cup to hold the bag open.
