I love everything on today’s weekly menu plan. The cornbread salad might seem a little strange, but trust me, you’re going to love it. I did a “salad cooking class” a few years ago for a Relief Society activity and everyone loved it. They were a bit skeptical at first, but one bite and they were hooked. It’s honestly so good.

(This recipe is buried deep in my archives and if you’ve never made it, you need to. It’s delicious! Grill some chicken to eat along with it, or just make a meatless meal with this salad. It’s loaded with beans, veggies, cheese and bacon. It’s definitely a favorite of mine!)
