- 10 eggs
- 1/4 cup half-and-half
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes
- 2 1/2 cups shredded colby jack cheese, divided
- 1 pound breakfast sausage
- 3 tablespoons butter
- 1 pkg. (20 oz) Southwest Style Hashbrowns (I use Simply potatoes)
Toppings (optional):
- Sour cream
- Salsa
- Avocado
- Cilantro
Instructions
- Preheat oven to 350 degrees.
- In a medium bowl, whisk together the eggs, half-and-half, salt, pepper, red pepper flakes and 1 cup of the cheese. Set aside.
- In a large oven safe skillet, brown breakfast sausage over medium heat. Cook until no longer pink and then scoop onto a paper towel-lined plate and return skillet to stovetop.
- Add butter to skillet and melt. Add hashbrowns to skillet and cook over medium high heat until golden and slightly crispy on edges.
- Reduce heat to medium and add the cooked sausage and eggs into the skillet with the hashbrowns. With a spatula or large wooden spoon, gently stir occasionally until eggs are set.
- Sprinkle with remaining cheese and put in oven and cook for 10 minutes or until cheese is melted and bubbling.
- Serve immediately with desired toppings.
