Several years ago, I shared the recipe for the chocolate chip cookie bars my mom made while I was growing up. They’ve always been one of my all-time favorites, and the other day I decided to switch things up by adding butterscotch chips. Best. Decision. Ever. Meet these irresistible Chocolate Chip Butterscotch Cookie Bars—a sweet twist on a childhood favorite that’s every bit as delicious as it sounds!
If you’re like me, you can never have too many cookie bar recipes up your sleeve. They’re so quick and simple to make. These chocolate chip butterscotch cookie bars are one you definitely need to give a try. They’re soft, chewy, buttery and loaded with chocolate and butterscotch flavor in every bite. Seriously so, so good.
I think that chocolate and butterscotch might just be one of the most underrated flavor combinations. There is just something about it that gets me every time. Maybe that’s why my favorite part of scotcheroos is the chocolate/butterscotch topping.

Theses bars are ridiculously easy, and are basically the lazy way to make cookies. No scooping dough, no baking multiple batches—just press the dough into a pan and bake.
A few tips for making these cookie bars:
- Don’t over bake them. The bars should still look slightly underdone in the center when you pull them from the oven. They’ll continue to set as they cool.
- Let them cool before cutting for the cleanest slices.
- If you want to make them look “prettier” sprinkle a handful of chocolate and butterscotch chips over the top before baking.
- If you want to make these even more indulgent, try one warm with a scoop of vanilla ice cream on top.

So many reasons to love these bars:
- The flavor is deep, rich and sweet.
- Makes a small 8×8 pan, but an easily be doubled and pressed into a 9×13 pan. No need to double the baking time.
- If you don’t have a hand or stand mixer you can easily mix these with a spatula or wooden spoon. The ingredients will come together easily.
Now go put an apron on and get baking! These cookie bars are calling your name.
