It was 5 degrees outside this morning at 5 AM when I went to the gym. . . . . .brrrrrrrr!
That is just too dang cold for me. I don’t know what Mother Nature is thinking!
I don’t know about you, but when it’s that cold outside I just want to stay inside and bake. So that’s just what I did today. I baked this yummy chocolate chip cake and some pretty fabulous chocolate chip cookies (I’ll share that recipe another day).
Years ago my neighbor brought me this cake. I don’t even remember why she brought it, maybe I’d just had a baby or maybe she was just being nice. Whatever the reason, I am just really glad she did. We all fell in love with this cake. and she was kind enough to share the recipe with me. Both of us have since moved, but I still make this cake and think of her every time I do!
This cake is nothing fancy, but it is really good. We love it with a cold glass of milk. It is so simple to throw together and I’ll bet you probably have all the ingredients already in your pantry. You will love this cake!
- 1 cup milk
- 1 Tbsp. white vinegar
- 1 stick butter
- 1 cup sugar
- 2 eggs
- 1 tsp. vanilla
- 1 1/2 cups flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 cup chocolate chips
- 1/4 cup butter, softened
- 1/4 cup cocoa
- 3 cups powdered sugar
- 1 tsp. vanilla
- 4-5 Tbsp. cream or half-n-half
Combine milk and vinegar and let set for about 5 minutes or until milk curdles.
Cream butter and sugar. Add eggs and mix well.
Add milk mixture, mix well.
Mix in flour, baking soda and salt. Mix until well combined.
Pour into a greased 9 x 13 pan OR 2 9-inch cake pans.
Sprinkle chocolate chips evenly on top of cake. (Feel free to sprinkle on a few extra).
Bake at 350 for 20-25 minutes. Cool.
Combine frosting ingredients and spread over cooled cake.
