These Chocolate Peanut Butter Fantasy Bars might just be one of the most decadent bars ever! Chocolate chips, coconut, sweetened condensed milk and peanut butter are all the stars of the show.
Yay!! It’s February 1st today. I’m sooo glad January is over. I think January is kind of a depressing, gloomy month. I’m so ready for sunshine, blue skies, and warmer temps. But since we’re still a couple months away from that, I guess I’ll just have to rely on anything chocolate to get me through these cold, wintry days.
These Chocolate Peanut Butter Fantasy Bars definitely made one of those gloomy cold days last week much better. How could these not brighten anybody’s day:
1. Coconut . . .love it!
2. Peanut Butter . . .can’t live without it!
3. Sweetened condensed milk . . .I’m completely hooked!
4. Chocolate . . .definitely one of my food groups!
I wasn’t sure how the peanut butter would work with the coconut and sweetened condensed milk, but oh my heck, these bars were amazing! Gooey, rich, chocolaty and completely delicious! I felt like I was eating a peanut butter Mounds bar . . .kinda weird, I know, but that’s the best way to describe them.
You’ve got a chocolate cookie/cake layer on the bottom, followed with a layer of coconut & chocolate chips, then you pour a can of sweetened condensed milk on top. Then after they bake, you spread a delicious chocolate/peanut butter layer top finish them off. Seriously, these were amazing. Even Braydon, my picky, picky, eater loved these and he is not a huge fan of coconut!
- 1 chocolate cake mix
- 1/2 cup butter, melted
- 1 egg
- 1 1/2 cups sweetened flaked coconut
- 1 cup semi sweet chocolate chips
- 1 can (14 oz) sweetened condensed milk
- 2 cups milk chocolate chips
- 1/2 cup creamy peanut butter
- Preheat oven to 350 degrees. Lightly spray a 9×13 baking dish.
- In the bowl of an electric mixer, combine cake mix, melted butter and egg. Mix on medium speed until smooth (it will be thick). Press evenly into prepared baking dish.
- Sprinkle coconut over the top then sprinkle the semi sweet chocolate chips next.
- Pour sweetened condensed milk evenly over coconut layer.
- Bake 25-30 minutes, or until edges are a light golden brown. Let cool 5-6 minutes before spreading topping on.
- While bars are baking, make topping by melting together in a saucepan the chocolate chips and peanut butter. Cook over low heat, stirring until mixture is smooth.
- Spread carefully over warm coconut layer.
- Cool at least 30 minutes. Cut into bars.
These are really rich bars, so I recommend cutting them small.
