Ingredients

Dressing:

  • 3 tablespoons mayonnaise
  • 3 tablespoons Greek yogurt
  • 1 tablespoon red wine vinegar
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Salad:

  • 9 hard-boiled eggs, cut into chunks
  • 8 strips bacon, cooked and crumbled, plus more for garnish
  • 2 avocados, cut into chunks
  • 1/3 cup crumbled blue cheese or feta, plus more for garnish
  • 1/2 cup cherry tomatoes, halved, plus more for garnish
  • 2 tablespoons freshly chopped chives

Instructions

Dressing:

  1. In a small bowl, whisk together mayonnaise, yogurt, and red wine vinegar. Season with salt and pepper to taste.

Salad:

  1. In a large serving bowl, gently mix together eggs, bacon, avocado, blue cheese, and cherry tomatoes. Pour dressing over the mixture and gently fold in until salad mixture is evenly coated. S
  2. Season with salt and pepper.
  3. Garnish with chives and additional blue cheese or feta cheese crumbles.

Notes

  • Start with just a few pinches of salt and pepper in the dressing and then add more if needed once the salad is fully assembled.
