Coconut Bread

  • 4 eggs
  • 2 cups sugar
  • 3 cups flour
  • 1 cup oil
  • 1 cup buttermilk
  • 2 teaspoon coconut extract
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/2 teaspoon soda
  • 1/2 teaspoon baking powder
  • 1 cup coconut ((optional))


  • 1 cup sugar
  • 1/2 cup water
  • 1 teasspoon coconut extract
  • 2 tablespoon butter


  1. In a large mixing bowl, mix together the oil and the sugar. Add the eggs and beat well. Mix in the buttermilk and flavorings. Add flour, salt, soda and baking powder, and mix until well blended. Stir in the coconut.
  2. Grease and prepare 2 small loaf pans (8 x 4 or 8.5 x 4.5).  Bake at 325 degrees for 1 hour and five minutes.  Cover with foil if bread starts to get too dark.  Cool in pans for 10 minutes, while preparing the glaze.
  3. With a toothpick or skewer, poke holes all over the top of bread.  Slowly pour glaze over bread.  Allow to set in pans for a couple hours before taking the bread out of the pans.


  1. Mix all together over medium heat, and boil mixture for about 4 to 5 minutes. Spoon all of it over the bread.  Leave in pans to put the glaze on.
