Crispy Polynesian Butterscotch Cookies

  • ½ cup butter, softened
  • ½ cup vegetable or canola oil
  • ½ cup sugar
  • ½ cup brown sugar
  • 1 egg
  • 2 teaspoons vanilla
  • 1½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups butterscotch chips
  • ½ cup quick cooking oats
  • 3/4 cup crispy corn flakes
  • 3/4 cup flaked coconut


  1. Preheat oven to 350 F. Line two cookie sheets with parchment paper and set aside.
  2. Cream together the butter, oil, sugars, egg and vanilla. Add salt, baking soda, flour and mix until just incorporated. Add oats, coconut, crushed cornflakes and butterscotch chips and mix on low, just until combined. 
  3. Using a cookie scoop, place dough about 2-3 inches apart on prepared cookie sheets.
  4. Bake for 12-14 minutes or until edges are golden brown. Remove from oven and let cookies sit on baking sheets for about 3 to 4 minutes then transfer to a wire rack.
