Are you ready for one of the most delicious bar cookies you’ll ever eat? Say hello to these Dulce de Leche Oatmeal Bars that are going to change your life.
Holy crap they’re good! Like “hide these from the kids” good and “if you can’t find me I’ll be hiding in the closet with these” good.
They are gooey and rich. They’re like oatmeal blondies meet gooey bars and it’s a match made in heaven.
If you’ve never tasted dulce de leche then you are truly missing out. In case you don’t know what it is, let me tell you. Dulce de leche is a thick caramel mixture that is made with sweet milk and cooked down until it’s the color and consistency of thick caramel. It’s basically an extra rich, extra thick caramel sauce that tastes amazing and will turn anything like an average bar cookie into something truly phenomenal.
You can find cans of dulce de leche usually in two different places in grocery stores. It will either be next to the sweetened condensed milk or in the Hispanic foods section and sometimes in both places.

These are the perfect bars to take anywhere. A thick layer of dulce de leche sandwiched between two oatmeal cookie layers. Who isn’t going to love these?
A helpful hint when making these bars:
The oatmeal dough is slightly sticky, so when you’re pressing the pieces on top of the dulce de leche, either spray your hands with cooking spray or get them slightly wet with some cold water . . . works like a charm and keeps the dough from sticking to your hands.
If I can promise you one thing, it’s that you need these bars in your life. They’re seriously fantastic and might easily become your go-to bar cookie recipe.
These are so simple to throw together and other than the dulce de leche, you probably have all the ingredients sitting on your pantry shelf.

- egg

- baking soda
- salt
- flour
- old fashioned oats
- Dulce de Leche

Dulce de Leche Oatmeal Bars
- Total Time: 40 minutes
- Yield: 16 bars 1x
Ingredients
- 1/2 cup butter, softened
- 1 cup brown sugar
- 1 egg
- 2 teaspoons vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups all purpose flour
- 1 1/2 cups old fashioned oats
- 1 can (13.4 oz) Dulce de Leche
Instructions
- Preheat oven to 350 degrees. Sray a 9×9-inch baking dish with cooking spray. Set aside.
- Cream butter and sugar in the bowl of a stand mixer (or you can use a hand mixer) until smooth. Add egg, vanilla, and mix until combined.
- Add baking soda, salt, flour until combined then add oats and mix on low until combined.
- Press half the mixture into the bottom of the prepared pan (it won’t be a thick layer).
- Place dulce de leche in a small microwave safe bowl and heat about 45 seconds in the microwave, then stir until smooth. Spread evenly over the bars, keeping about a 1/4” border around the edges of the pan.
- Using your fingers, take small pieces of the remaining dough and flatten them slightly with your fingers and place them over the top of the dulce de leche.
- Bake for about 23 to 28 minutes, or until the top of the bars are barely golden brown. Cool completely before cutting.
- Prep Time: 15 mins
- Cook Time: 25 mins

Hey Jenny, I’ve never frozen these but I don’t see why it wouldn’t work. Just wrap them really well and then make sure to allow plenty of time for them to thaw before serving them.
