Ground Turkey & Sweet Potato Taco Skillet

  • 1 lb ground turkey
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1 tablespoon tomato paste
  • 2 cups sweet potato, peeled & cut into 1/2 inch pieces
  • 1 can (15 oz) black beans, drained
  • 1 jar (15 oz) salsa (or about 2 cups)
  • 2 cups loosely packed baby spinach
  • 3/4 to 1 cup grated Colby jack cheese

  1. In a large skillet, cook turkey over medium-high heat, using a wooden spoon to break it up as it cooks. Continue cooking until turkey is almost browned completely.
  2. Add chili powder, smoked paprika, garlic powder, salt, pepper, cumin, oregano and tomato paste and continue cooking until ground turkey is fully cooked.
  3. Add sweet potatoes, black beans and salsa to the skillet. Stir until well combined.
  4. Cover the skillet, reduce heat to a medium-low/low and cook until the sweet potatoes are tender, stirring occasionally, about 15 to 18 minutes.
  5. While the potatoes are simmering, preheat your oven to 350 degrees. Once the sweet potatoes are tender, add in spinach and mix until just wilted. Add more salt and pepper if needed.
  6. Sprinkle the cheese over the top and put in the oven for about 5 minutes, or long enough for the cheese to melt.
  7. Serve topped with garnishes of your choice.
