This Hawaiian Pineapple Chicken is so good that even your pickiest eaters will love it! So simple and delicious!
Yesterday was an exciting and emotional day. My oldest son Josh graduated from High School. I am still trying to figure out how he grew up so fast . . . I swear he was just in diapers and now he is moving on to bigger and better things. He leaves on his LDS mission on August 22 and I couldn’t be more excited for him. He is an amazing kid and I am so proud of him and excited for all that awaits him. It’s just crazy to me how life just keeps going faster, and faster. It feels like life is a fast lane and I REALLY, REALLY wish we could just hit the brakes and slow it down!
Anyway, now onto this yummy, yummy recipe. I saw this awhile back on Jamie Cooks it Up and I knew it was one I needed to try. We ALL loved it . . . and YES, even my picky, picky Braydon loved it. I did use pineapple tidbits instead of chunks, just because I like them better. It was such a simple, delicious dinner. I will definitely be making this again, very soon.

Hawaiian Pineapple Chicken

Description
This Hawaiian Pineapple Chicken is so good that even your pickiest eaters will love it! So simple and delicious!
Ingredients
- 5 chicken breasts cut into strips
- 1/2 cup flour
- 1 tsp. salt
- 1 Tbsp. lemon pepper
- 3 T olive oil
SAUCE:
- 1 can pineapple chunks
- 1 1/4 cup pineapple juice (use the pineapple juice from the can, there won’t be enough to equal 1 1/4 C. Just add a bit of water to make up the difference.)
- 3/4 cup apple cider vinegar
- 1 tsp. soy sauce
- 1/4 t ginger
- 1 chicken bullion cube
- 1 cup sugar
- 2 Tbsp. cornstarch
- green onions (optional, but tasty)
Instructions
- In a dish mix the flour, salt and lemon pepper.
- Cut your chicken into strips or large pieces with some kitchen scissors. Dredge the chicken through the flour mixture.
- Into a large hot skillet add the olive oil. Place each piece of chicken into the hot pan. Over medium heat cook the chicken until it is golden brown. Turn each piece over and repeat. Lay the golden brown chicken in a 9×13 pan that has been sprayed with cooking spray.
- Pour the juice from the pineapple can into a measuring cup. Add enough water to the juice to equal 1 1/4 cup. Set pineapple chunks aside.
- In a medium sized sauce pan whisk together the ginger, sugar and cornstarch. Add pineapple juice, vinegar, soy sauce, and bullion.
- Bring the sauce to a boil over medium heat and boil for 2 minutes, stirring occasionally. Then pour 2/3 of the sauce over the top of your chicken.
- Bake uncovered at 375 degrees for 30 minutes.
- Take the chicken out of the oven and pour the pineapple chunks over the top. Pour the rest of the sauce over the top of the chicken and return it to the oven. Bake for another 10-15 minutes. Sprinkle a bit of green onion over the top if you choose. Serve with white or brown rice.
