Description

These Healthy Oatmeal Muffins can be whipped up in under 30 minutes with just a few simple ingredients. They are the perfect grab & go breakfast or delicious snack any time of the day!


Ingredients

  • 1 cup buttermilk
  • 1 cup old fashioned oats
  • 1 egg
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 cup whole wheat flour
  • 1/4 cup vegetable or canola oil

Instructions

  1. Preheat oven to 375°.  Spray or line a 12 cup muffin tin and set aside.
  2. In a medium size bowl, add oats and pour buttermilk over them. Give them a good stir and let sit for 5 minutes.
  3. Add the egg, brown sugar and vanilla and mix well.
  4. Add the baking soda, salt, baking powder, flour and oil. Mix until just combined.
  5. Divide evenly between the prepared muffin cups.
  6. Bake for 12 to 15 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool in the pan for 5 minutes, then gently remove to a wire rack to cool completely.
