Kitchen Cupboard Cookies

Description

The title of these cookies describes them perfectly. Full of all sorts of add-ins from my kitchen cupboard, these cookies turned out so good I had to share them! 


Ingredients

  • 1/2 cup butter
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tablespoon vanilla
  • 1 teaspoon teaspoon salt
  • 1 teaspoon baking soda
  • 1 3/4 cup flour
  • 2 cups quick oats
  • 1 cup Rice Krispies
  • 1/2 cup butterscotch chips
  • 1/2 cup chocolate chips
  • 1/2 cup coconut
  • 1/2 cup mini m&m’s candies

Instructions

  1. In the bowl of an electric mixture, cream butter and sugars. Add eggs and vanilla and mix well.
  2. Add salt, baking soda and flour, and mix until combined. Add oats and mix until well combined.
  3. Add in butterscotch chips, chocolate chips, coconut and mini M&M’s. Mix on low until just combined. Fold in remaining ingredients.
  4. Scoop spoonfuls and place on baking sheet and gently press down with the palm of your hand. Bake at 350 for 10 minutes. The cookies will look underbaked, but take them out and let them sit on the cookie sheet for a couple minutes and the move them to a cooling rack.

Notes

  • This is a really thick dough and these cookies do not flatten out very much at all. You can tap the cookie sheet on the counter to flatten them slightly if you’d like.
  • Be sure not to over bake these, they will look a little under-baked when you take them out of the oven.
