Baseball season is underway and with a house full of boys that equals busy!!
We have games five nights a week and sometimes three games a night! Yes, you heard me, three games in one night. That gets a little complicated, trust me. We do our best and our boys know that some nights only dad may be at their game and other nights it may be mom. We pretty much have to divide and conquer.
So with a crazy, busy schedule like we have right now, I need quick and simple meals. This loaded baked potato casserole is the perfect thing for those nights. I can throw in the oven around 3:15 and its ready by 4:30, which is when I have to have dinner on the table so everyone can make it to their games on-time and well-fed. . . snack shack hot dogs get really old after awhile, so I try and have my boys fed before they head out the door.
My boys inhaled this the other night. They kept Mmmming and Ahhhhhing over this stuff, and I can’t say I blame them, I was doing the same thing. We drizzled a little ranch dressing on top and it was perfect!
Total comfort food and so easy to make. I love these kind of meals!

Loaded Baked Potato Casserole
- Total Time: 75 minutes
Ingredients
- 4 russet potatoes (, cubed)
- 4 chicken breasts (, cubed)
- 1 1/4 cups bacon (, crumbled)
- 1 1/2 cups grated cheddar cheese
- 4 green onions (, sliced)
- 2 tablespoons butter (, sliced)
- Salt & pepper to taste
- McCormick Montreal chicken seasoning
Instructions
- Preheat oven to 350 degrees. Place potatoes in a 9×13 baking dish. Drizzle with olive oil and season with salt and pepper. Stir to coat potatoes.
- Season chicken with salt and pepper and Montreal chicken seasoning.
- Add bacon, seasoned raw chicken, and cheddar cheese to the potatoes. Toss gently.
- Lay butter slices over casserole. Cover with aluminum foil and bake for 60 minutes. Remove foil and bake for 15 more minutes or until potatoes are fork tender.
