It’s a new year which means many of you may have vowed you’re going to eat “healthier.” You know what I mean. . . no carbs, no sugar, lots of veggies, more exercise, etc. So if you’re one of those who have sworn off carbs and/or sweets, then I got your back today.
I really, really wanted to post a new cookie recipe today, but I decided to start the new year off with something a little more on the healthy side of things. So instead of cookies, you get Low Carb Bacon Cheeseburger Casserole today. Don’t worry though, the cookie post will be up sooner than later.
The holidays are over and if many of you overindulged like I did, this casserole is going to hit the spot. It’s absolutely delicious and simple to make. It reminds me of a crustless quiche. It’s loaded with ground beef, bacon, cheese, eggs and sour cream.
Plus it’s packed with protein which is an added bonus. My boys love this!
I had to laugh though because the other night when we ate this, I served homemade flatbread with it because I had some dough in the fridge I’d made the day before that I needed to use up. So we ate low carb casserole, a green salad and flatbread (with butter and honey slathered on it) . . . hey, I didn’t say I vowed to give up carbs!
You will not miss the carbs with this one my friends, I promise. One more thing, if you want to make this even more low carb, you could use almond milk and low sugar ketchup. This is a great meal for those nights when you need something really quick and delicious.

This Low Carb Bacon Cheeseburger Casserole is a simple, delicious meal that everyone will love. Bacon, ground beef cheese, eggs, sour cream. It’s some serious comfort food.
Ingredients
- 1 pound ground beef
- 1/2 teaspoon salt
- 2 tablespoons ketchup
- 1 tablespoon mustard
- 1 teaspoon onion powder
- 1 tablespoon Hidden Valley Original Ranch Salad Dressing & Seasoning Mix
- 8 strips of bacon, cooked and chopped
- 1 cup shredded cheddar cheese
- 4 large eggs
- 1/2 cup milk
- 1/2 cup sour cream
- Salt & pepper to taste
Instructions
- Preheat oven to 350ºF. Lightly spray an 8×8-inch or 11×7-inch pan with cooking spray. Set aside.
- In a medium skillet, add ground beef and salt. Cook over medium heat until no longer pink. Drain fat and remove skillet from heat. Stir in ketchup, mustard, onion powder and ranch mix. Mix until well combined. Season with salt & pepper to taste. Spread in the bottom of prepared pan. Top with cooked bacon and shredded cheese.
- In a medium bowl, whisk together eggs, milk and sour cream. Pour on top of beef mixture.
- Bake, uncovered, for 30 to 35 minutes or until center is set.
Notes
- I one and a halved this recipe and cooked it in a deep casserole dish I have that’s slightly bigger than a 9×9 pan. You could easily double it and bake it in a 9×13 pan.
- The original recipe calls for 2 tablespoons of mustard, but because a couple of my boys detest the stuff, I cut it back to 1 tablespoon so it wouldn’t be super detectable. If you’re a fan of mustard, go ahead and add the full 2 tablespoons or adjust it according to your liking.

I made this a few weeks ago and my kids loved it, but I wondered how I could add some “green” to it. I made it again tonight and added finely chopped spinach to the meat mixture.
