These Lunch Lady Peanut Butter Bars will completely rock your world. They are so incredibly good it’s just ridiculous. I saw them months ago and I finally got around to making them. As a matter of fact, I’ve made them twice now and am even more in love with them than the first time. I’m not sure what it is about them, but they are so delicious.
An oatmeal peanut butter cookie layer, followed by a layer of peanut butter and then chocolate frosting . . . .ooohhh my! These are so simple to make, absolutely fabulous and make a lot (which could be a good thing or a bad thing).

Lunch Lady Peanut Butter Bars
- Total Time: 20 minutes

Ingredients
Peanut Butter Cookie Layer:
- 1 cup sugar
- 1 cup brown sugar, firmly packed
- 1 cup butter
- 1 tsp vanilla
- 2 eggs
- 1 cup peanut butter
- 2 cups old fashioned oatmeal
- 2 cups flour
- 1 tsp baking soda
- 1 tsp salt
Peanut Butter Layer:
- 1 1/2 cups peanut butter
My favorite Chocolate Frosting:
- 1/4 cup softened butter
- 1/4 cup evaporated milk
- 1/4 cup cocoa
- 1 teaspoon vanilla
- 3 cups powdered sugar
- Pinch of salt
Instructions
Cookie Layer:
- Spray a large baking/cookie sheet (about 17.8 x 12.8 x 1 inch) with cooking spray.
- In the bowl of a stand mixer, cream the butter and sugars together. Add the vanilla, eggs, and peanut butter and combine. Add the oatmeal, flour, baking soda and salt and mix together.
- Spread dough onto prepared sheet. Make at 350 degrees for 15-18 minutes and remove from oven (they will look underbaked).
- Immediately drop remaining peanut butter by spoonfuls all over on top of warm bars. Let set for about 5-6 minutes and gently spread when after peanut butter begins has to melt. It will spread easily when the peanut butter has softened on the warm bars. Let the peanut butter layer until peanut butter has set and become solid again.
- Frost with your favorite chocolate frosting and cut into bars.
Frosting:

In a medium bowl, combine all frosting ingredients with a hand mixer until smooth and spread on top of bars.

Cut into bars and serve.
Notes
Depending on how big you cut these bars, you can get anywhere from about 24 to 48 bars.
