Maple-Almond Skillet Granola

  • 1/4 cup maple syrup
  • 2 teaspoons vanilla
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons canola or vegetable oil
  • 1/2 cup sliced almonds
  • 1 1/2 cups old-fashioned oats


Line a large baking sheet with parchment paper.

In a small bowl, whisk together the maple syrup, vanilla, cinnamon and salt. Set aside.

In a non-stick 12-inch skillet heat the oil over medium heat. Add the almonds and cook, stirring often, until they begin to turn golden, about 4 minutes.  Add the oats and cook, stirring frequently, until the oats are golden and the almonds are toasted, about 5 to 6 minutes.

Add the maple syrup mixture to the skillet and cook & stir until absorbed and the mixture turns slightly darker, about 3 minutes. Transfer granola to the prepared sheet and spread into an even layer. Let cool, without touching, for 20 minutes. Break into pieces and enjoy.

Store in an airtight container.
