Hi Jodi. The slow cooker enchiladas look great but I am opting to make your mom’s ground beef enchiladas. Question on the flour tortilla. Do you fry them to get them pliable or crispy prior to stuffing them. Can’t wait to make them this week. I have never ever made or eaten an enchilada!
Hi Teresa! For the enchiladas, I don’t do anything to the flour tortillas before hand. I just make sure they’re at room temperature and place the meat filling along one side/edge and roll them up. If you want to use corn tortillas, then you need to warm them in the microwave for about 15 seconds so they’re warm and pliable. I LOVE corn tortillas, but they sometimes don’t hold up as well as the flour tortillas do for these enchiladas, so just be aware of that.
