This Mississippi Mud Ice Cream Pie is outrageously delicious! An Oreo crust layered with a rich fudge sauce, creamy coffee ice cream, more fudge sauce and topped with crushed Oreos. It’s the perfect dessert for these hot summer nights.
If you had to choose a dessert, would you choose a slice of pie over say a chocolate chip cookie or piece of chocolate cake? I probably wouldn’t unless the slice of pie was this Mississippi Mud Ice Cream Pie.
This pie is sinfully rich. It’s starts with an Oreo crust, then has a layer of homemade fudge sauce, coffee ice cream and is finished off with more fudge sauce. It’s completely fabulous and is worth every. single. calorie.
I’m pretty sure if my brother Chris and his wife are reading this post, they are both drooling and wishing they had
a slice of this, a whole pie in front of them. Don’t worry Chris and Mindy, I ate a slice for each of you.
This pie is the perfect dessert for summertime, or any occasion. It’s also a great substitute for birthday cake (right Mindy 😉). You don’t really even need an excuse to make it. Just make it and you can thank me later.
Ingredients for Mississippi Mud Ice Cream Pie:
- Oreo Crust – Oreos and butter
- Coffee ice cream – Make sure you use a good one, I love Häagen–Dazs the most!
- Homemade fudge sauce – Unsweetened chocolate, butter, sugar, evaporated milk and vanilla.
- Extra crushed Oreos – For sprinkling on top if you want.
Assembling the pie
For the filling, start by letting the ice cream sit on the counter for about 10 minutes. This will soften it enough to make it spoonable and spreadable, but not enough for it to melt. Make sure you don’t let the ice cream melt too much because, it will turn icy in the freezer when it freezes again.
Can I use a different flavor of ice cream?
Mississippi Mud Ice Cream Pie is traditionally made with coffee ice cream, but if you’re not a fan of it, you can certainly swap it out for something you love. I think cookies & cream, chocolate, cookie dough, vanilla, etc., would all be delicious. But I do love this with coffee ice cream the very best (I’m not even a coffee drinker, but I love coffee ice cream, haha!)

- 25 Oreos
- 4 tbsp butter, melted (salted or unsalted is fine)
- 2 ounces unsweetened chocolate, cut up
- 2 tablespoons butter or margarine
- 1 cup sugar
- 2/3 cup evaporated milk
- 2 teaspoons vanilla
- 1 quart coffee ice cream (or any flavor you like)
- Put the Oreos in a food processor or blender and grind into fine crumbs. (You do not need to remove the filling from the Oreos.) Also, you could also place the Oreos in a resealable bag and crush them with a rolling pin. You want fine crumbs, so this way might take a little longer.
- Pour the Oreo crumbs to a bowl and stir in the melted butter. Mix until well combined.
- Press mixture into the bottom and up the sides of a 9″ pie plate. Chill until ready to fill.
- In a small saucepan melt the butter and chocolate, stir until smooth. Stir in the sugar, mixing until combined. Gradually stir in the evaporated milk and bring to a boil, stirring constantly. Once it comes to a boil, reduce the heat and let is gently boil/simmer for about 5 minutes or until thickened, stirring often. (It will be fairly thick.)
- Remove from the heat and stir in the vanilla. Set aside to cool.
ASSEMBLING THE PIE:
- Spoon about 1/3 to 1/2 cup of the sauce onto the bottom of the crust. Spread evenly.
- Spoon the softened ice cream into the pie plate and spread carefully and evenly (I like using an offset spatula).
- Put pie plate back into the freezer for about 30 minutes.
- pie from freezer and spread the remaining fudge sauce on top. Sprinkle with crushed Oreos (if desired) and place back in freezer for several hours before serving.
