I decided that I definitely have a love/hate relationship with summer. . . .
I love fresh vegetables from my garden, I hate weeding my garden, I love a green lawn, I hate my water bill, I love the warmth of the sun, I hate all the bugs, I love flowers, I hate the weeds, I love thunder showers, I hate the wind, I love to bake, I hate turning my oven on.
I could keep going . . .but I won’t.
The other day I was needing/wanting to bake something, but it was 3:00 in the afternoon and I didn’t want to heat up my kitchen. So I made these beauties . . . . I forgot how much I love these cookies. They are addicting and oh so yummy!
These cookies bring back memories of elementary school and our awesome lunch lady Esther. She made the most amazing chocolate cake and she made a killer no-bake cookie (although we called them haystacks when we were kids). I loved them in elementary school and I still love them today!
P.S. Be sure and check in next week because I’m going to do a salute to summer and share some of my favorite home-made ice cream recipes every day.
- 1 stick butter
- 2 Tbsp. cocoa
- 2 Cups sugar
- 1/2 cup milk
- 2/3 cup peanut butter
- 3 cups oatmeal
- 1 tsp. vanilla
In a medium saucepan, combine butter, cocoa, sugar and milk. Bring to a boil and cook for one minute. Remove from heat.
Add peanut butter and vanilla stir until smooth.
Add oatmeal and stir until well combined.
Drop by spoonfuls onto waxed paper-lined cookie sheets.
Let cool until set.
Try not to eat too many!!
