An oatmeal cookie crust with a creamy lemon filling, and more streusel cookie crumble on top. These Oatmeal Lemon Bars are heaven in a pan.
Sorry for the no post on Friday. I was having issues with my site and wasn’t able to post. Things are up and running again, thank goodness.
I hope everyone had a great weekend. I had big plans to work in our yard on Saturday but it rained all day long. My boys were thrilled because it got them out of doing yard work. I wasn’t so thrilled because our yard looks like the ghetto, and needs some serious work. Thankfully it’s the backyard that is the worst, so the neighbors don’t see it, but I do and it’s driving me nuts. I detest weeds and my garden and flower beds are full of them. I’m considering setting fire to them, it might be faster than trying to pull them, but with my luck the fire would get out of control and I’d burn our house down. So maybe I’ll just stick to pulling them.
Ok, enough talk about my weed-infested yard.
These lemon bars are not your ordinary lemon bars, they are oatmeal lemon bars and they are to die for. Seriously, they are.
I love the oatmeal crust. It’s not too sweet and has just a hint of cinnamon in it. The next layer is sweetened condensed milk (aka nectar of the Gods; the most delicious stuff ever; etc.) combined with lemon juice and lemon rind (complete yumminess) and then topped with more of the oatmeal mixture. If there is such a thing as heaven in cookie bar form, these bars are it!
Make these. I promise you will love them!
If you don't have an 11x7 pyrex baking dish, you can use a 9x9 which will make these bars slightly thicker or a 9x13 which would make them not quite as thick.
- Crust & topping:
- 1 1/2 cups flour
- 1 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 2/3 cup butter , softened
- 1 cup brown sugar
- 1 1/4 cups oatmeal
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup lemon juice
- 1/2 tsp. grated lemon rind
Lightly spray a 7 x 11 inch glass baking pan. Set aside.
Combine all crust ingredients in a large bowl and using either a hand mixer or pastry blender, mix until well combined. Mixture will be crumbly. Spread half of the oatmeal mixture into the bottom of the prepared pan and press down with your fingers until evenly spread.
In a small bowl, combine the sweetened condensed milk, lemon juice and lemon rind. Mix until well combined. Pour over crust in pan and gently spread until even.
Sprinkle remaining oatmeal mixture on top and carefully spread evenly using your fingers. Gently press mixture down.
Bake at 350 for 25 minutes or until edges begin to turn golden brown. Do not over bake!!
Remove from oven and allow to cool before cutting.
