It’s officially fall people which means pumpkin, pumpkin, pumpkin. . . . Yay!! It also means pumpkin recipes will be flooding the food blogging world and Pinterest and that is ok with me. I for one would be ok with pumpkin recipes year-round. What about you? Oh and don’t forget about all the fabulous apple recipes too. I’ve got some favorites I’ll share over the next little bit.
One of my all-time favorite bar cookies would be oatmeal carmelitas. I love everything about them. The oatmeal brown sugar crust, the gooey caramel layer, the chocolate chips, etc. What’s not to love? I was craving them the other day but since it’s “fall baking season” I decided to put a little spin on the classic oatmeal carmelita and make a pumpkin version. Ummmm, best. decision. ever.
These are just insanely good, that’s all I need to say.

- 1 pkg. ((14 oz) caramels, unwrapped (about 50 caramels))
- 1 can ((14 oz) sweetened condensed milk)
- 1 cup pumpkin puree
- 1 tsp. pumpkin pie spice
- 1 tsp. cinnamon
- Crust Layer
- 2 1/2 sticks melted butter
- 1 1/2 cups brown sugar
- 2 cups flour
- 2 cups oatmeal
- 1 tsp. salt
- 1 tsp. baking soda
- 2 tsp. cinnamon
- 1 1/4 cups semi-sweet chocolate chips
- 1 1/4 cups butterscotch chips
- Preheat oven to 350 degrees. Spray a 9×13 pan and set aside.
- In a medium saucepan melt caramels and sweetened condensed milk together over medium-low heat, stirring often. Once melted and smooth, remove from heat and add pumpkin puree, cinnamon and pumpkin pie spice. Stir until well combined and set aside.
- In a large bowl, combine melted butter, brown sugar, flour, oatmeal, salt, baking soda and cinnamon. Mix until well combined. Press 2/3 of the mixture into the prepared pan. Bake for 10 minutes.
- Remove from oven and pour caramel mixture evenly over partially baked crust. Sprinkle chocolate chips and butterscotch chips evenly over caramel layer and then evenly sprinkle remaining oatmeal mixture over top.
- Return to oven and bake for 20-25 minutes or until edges begin to turn a golden brown.
