It’s spring break right and we’re on a little vacation and I wasn’t on the ball enough to get posts ready before I left. So today I am sharing some oldies but goodies. Sometimes these archived recipes get passed up or forgotten thanks to the more recent recipes, which is why I wanted to bring these little recipes back into the limelight just in case you might have missed them.

These Chicken Chimichangas are the bomb, seriously. It was love at first bite. Don’t let the long list of ingredients and/or the fact that you have to fry these, scare you away. Trust me when I say you need to try these.
These Rustic Dinner Rolls are probably my favorite rolls I’ve ever made. They are easy to make, BUT do take several hours so plan accordingly. They are as good as any artisan roll you’d buy at a bakery. Hard on the outside, soft and chewy on the inside. Honestly, they are the best rolls!
Oh this Chicken Enchilada Skillet is fabulous! On the table in under 30 minutes. What’s not to love? I love skillet dinners. . . that’s all I need to say.
This Chocolate Mouse Meringue Shell Pie is heaven in a pie plate. Seriously, this stuff if so divine, I could eat an entire pie myself.
Finally, these Twix Bar Chocolate Chip Cookies. . .total deliciousness. It’s no secret that I am a cookie addict and these cookies happen to have one of my favorite candy bars in them. Honestly, these are really, really good.
