I am pretty sure my husband and I could easily win the Lamest Parents Ever Award. Let me just tell you why.
Our second son Zach, who is now 18, earned his Eagle Scout award when he was 16. Our third son Taylor was really close to finishing up the last few required merit badges and then he needed to choose and complete his eagle project. We thought it would be really cool to do a court of honor for both of them together so we held off on doing Zach’s.
Unfortunately, Taylor became a huge procrastinator and never (and still hasn’t) finished his merit badges and/or his eagle project. Well, life gets busy and time flies by and we just kind of forgot to hold a court of honor for Zach.
See, I told you we were lame.
I’ve always had a little bit of guilt that we never recognized and honored Zach for all his hard work in earning his Eagle.
I’m so relieved to say that after two and a half years we finally did a court of honor for Zach. Thankfully his best friend earned his Eagle and his cute mom was nice enough to invite us to do a combined court of honor with them. I can finally cross it off my list of things that have been nagging at me. Now if only Taylor would get on the ball and finish up his last few requirements.

These peanut butter bars are so yummy. And like the court of honor, I had totally forgotten about them until a few months ago when I found the recipe tucked away in one of my old recipe boxes.
I thought it was very fitting that these be one of the treats I made for Zach’s Eagle Court of Honor.
Years ago we are at my great Uncle Tom’s cabin and one of his granddaughters brought these bars. I fell in love with them and made sure to get the recipe from her.
Here is what you’ll need:
BARS:
- butter
- sugar
- brown sugar
- peanut butter
- egg
- vanilla
- baking powder
- salt
- flour
- old fashioned oats
FROSTING:
- butter
- creamy peanut butter
- vanilla
- powdered sugar
- half & half

You will love how easy these bars are to make. They use simple, basic ingredients that probably have in your pantry, which means you can make them anytime!

Peanut Butter Bars
- Total Time: 28 minutes

Description
A delicious peanut butter oatmeal bar cookie covered in a fabulous peanut butter frosting. These Peanut Butter Bars are so quick and easy to make and they taste fabulous.♡
Ingredients
- 1/2 cup butter, softened
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup peanut butter
- 1 egg
- 1 teaspoon vanilla
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup flour
- 1 cup old fashioned oats
Peanut Butter Frosting:
- 1/4 cup butter, softened
- 1/4 cup creamy peanut butter
- 1 teaspoon vanilla
- 1 3/4 cups powdered sugar, sifted
- 3 to 4 tablespoons half & half (or milk)
Instructions
- Spray a 9×9 pan with nonstick spray. Set aside.
- Cream together the butter and sugars and peanut butter. Add egg and vanilla, mix well.
- Add baking powder, salt, flour and oatmeal. Mix until combined.
- Spread into prepared pan and bake at 350 degrees for 15 to 16 minutes. (Edges will barely be a light golden brown – don’t over bake!)
- Remove from oven and allow to cool completely. Frost with peanut butter frosting.
Peanut Butter Frosting:
- In a medium bowl, using a hand mixer cream butter and peanut butter until well combined.
- Add vanilla, powdered sugar, and half & half and mix until smooth and creamy. Add more half & half if needed to get desired spreading consistency.
