Peanut Butter Bars

Description

A delicious peanut butter oatmeal bar cookie covered in a fabulous peanut butter frosting.  These Peanut Butter Bars are so quick and easy to make and they taste fabulous.


Ingredients

Units Scale
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup peanut butter
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup flour
  • 1 cup old fashioned oats

Peanut Butter Frosting:

  • 1/4 cup butter, softened
  • 1/4 cup creamy peanut butter
  • 1 teaspoon vanilla
  • 1 3/4 cups powdered sugar, sifted
  • 3 to 4 tablespoons half & half (or milk)

Instructions

  1. Spray a 9×9 pan with nonstick spray. Set aside.
  2. Cream together the butter and sugars and peanut butter. Add egg and vanilla, mix well.
  3. Add baking powder, salt, flour and oatmeal. Mix until combined.
  4. Spread into prepared pan and bake at 350 degrees for 15 to 16 minutes. (Edges will barely be a light golden brown – don’t over bake!)
  5. Remove from oven and allow to cool completely. Frost with peanut butter frosting.

Peanut Butter Frosting:

  1. In a medium bowl, using a hand mixer cream butter and peanut butter until well combined.
  2. Add vanilla, powdered sugar, and half & half and mix until smooth and creamy.  Add more half & half if needed to get desired spreading consistency.
