The other day I needed a treat but it was 104 degrees outside and so the last thing I wanted to do was turn on my oven.

I decided scotcheroos were the perfect thing to make. They have always been one of my favorite treats.  I remember the first time I ever had one was in elementary school.  My friend Kristie had one in her lunch and she was nice enough to share.  Her mom always put a peanut M&M on top and I thought that was the coolest thing ever.

I had a box of Multigrain Peanut Butter Cheerios in my pantry and decided that if I used those instead of Rice Krispies, then maybe I wouldn’t feel as guilty when I ended up eating half the pan.  Of course, then I had to go and toss in some Reese’s Peanut Butter cups which probably threw the whole “healthier” idea out the window.

Oh well, I had good intentions!  

By the way, these were absolutely delicious!

Peanut Butter Cheerio Scotcheroos

Ingredients

Units Scale
  • 1 cup sugar
  • 1 cup corn syrup
  • 1 cup peanut butter
  • 5 1/2 cups Multigrain Peanut Butter Cheerios
  • 2 (4.25 oz) Reese’s Peanut Butter Cups

Topping:

  • 1 1/2 cups milk chocolate chips
  • 1 1/2 cups cup butterscotch chips

Instructions

  1. Place corn syrup and sugar into 3-quart saucepan. Cook over medium heat, stirring frequently, until sugar dissolves and mixture just begins to boil. Remove from heat. Stir in peanut butter. Mix well.
  2. Stir in Cheerios and mix until well coated.
  3. Gently stir in chopped Reese’s Peanut Butter cups.
  4. Press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Set aside.

Topping:

  1. In microwave-safe bowl, put chocolate chips and butterscotch chips.  Cook for one minute on high, stir until smooth.  If there are still lumps, cooks for another 30 seconds at 50% power.
  2. Spread over Cheerios mixture. Let cool and then cut.

    I found using the 2 cups of chips didn’t make a topping as thick as pictured so I made another batch of it and added
