It’s definitely been a minute since I’ve posted a brand new recipe. Sorry, but this grandma business is taking priority over me spending time in the kitchen. Hopefully the past few recipes I’ve reposted have been recipes that are new to some of you or at least ones that you have forgotten about or haven’t made in a long time.
It’s definitely not a secret that we are huge peanut butter fans! Peanut butter is one of those things (like butter and chocolate chips) that causes me to stress when my supply is running low. So needless to say these peanut butter oatmeal bars won us over!
Peanut butter, chocolate and oatmeal are definitely a winning combination. These peanut butter bars happen to be one of my all time favorite bars in the history of ever, but these bars I am sharing today are ranking right up there at the top.

These peanut butter oatmeal bars are truly irresistible! The topping is what takes these to the next level! It might look like chocolate frosting, but it’s really not! It’s milk chocolate chips and peanut butter melted together and it’s absolutely fabulous! Because of the peanut butter, the chocolate chips don’t harden back up and it stays creamy and soft. Seriously it makes these bars killer!
So the next time you are craving something sweet or that beloved chocolate and peanut butter combination, look no further! These bars are the ultimate treat of a thick, sweet, almost fudgy cookie bar topped with a creamy layer of chocolate. And they are so easy to make! No shaping balls of dough and baking 3 different trays of cookies. Just one pan in the oven and you are done!

HERE IS WHAT YOU WILL NEED:
- brown sugar
- granulated sugar
- peanut butter
- eggs
- vanilla
- flour
- old fashioned oats
- baking powder
- salt

CAN I USE QUICK COOKING OATS?
You could, but this recipe calls for old fashioned oats for a reason. Old fashioned oats give these peanut butter oatmeal bars a fudge-like texture. If you use quick cooking oats, the bars will still taste good, but they will not be the same texture because oats will disappear more into the bars and you won’t get quite the same experience.
CAN I FREEZE THESE BARS?
Yes, you absolutely can. Let the chocolate set completely and then slice into bars. Store them in an air tight container for up to 3 months in the freezer.
CAN I USE SEMISWEET CHOCOLATE CHIPS?
Of course you can! It’s definitely a personal preference here. Using milk chocolate chips definitely makes these bars sweeter than using semisweet would. You could also use half milk chocolate chips and half semisweet.

Peanut Butter Oatmeal Bars are loaded with oatmeal and topped with a fudgy peanut butter topping that makes them ridiculously delicious! ♡
Ingredients
Bars:
- 1 cup butter, softened
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 1 cup creamy peanut butter
- 2 eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 cups old fashioned oats
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Topping
- 2 cups milk chocolate chips
- 1 cup creamy peanut butter
Instructions
Bars:
- Preheat oven to 350º F.
- Using an electric mixer cream together the butter, both sugars and the peanut butter. Mix until light and fluffy.
- Add the eggs and vanilla and mix until combined.
- Add in the oats, flour, baking powder and salt and mix until just combined.
- Press into a 13×9 inch baking pan and bake for 20-23 minutes, just until the edges are barely golden. DON’T OVER BAKE!
- Remove from oven and let cool slightly.
Frosting:
- To prepare the topping place the chocolate chips and peanut butter in a microwave safe bowl and heat for 60 seconds. Remove and stir until the chocolate is completely melted.
Notes
- This recipe can easily be halved and made in an 8×8-inch pan.
- Prep Time: 10 mins
- Cook Time: 18 to 22 mins
