Peanut Butter Oatmeal Bars are loaded with oatmeal and topped with a fudgy peanut butter topping that makes them ridiculously delicious! ♡

Bars:
- 1 cup butter, softened
- 3/4 cup brown sugar
- 3/4 cup granulated sugar
- 1 cup creamy peanut butter
- 2 eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 cups old fashioned oats
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Topping
- 2 cups milk chocolate chips
- 1 cup creamy peanut butter
Instructions
Bars:
- Preheat oven to 350º F.
- Using an electric mixer cream together the butter, both sugars and the peanut butter. Mix until light and fluffy.
- Add the eggs and vanilla and mix until combined.
- Add in the oats, flour, baking powder and salt and mix until just combined.
- Press into a 13×9 inch baking pan and bake for 20-23 minutes, just until the edges are barely golden. DON’T OVER BAKE!
- Remove from oven and let cool slightly.
Frosting:
- To prepare the topping place the chocolate chips and peanut butter in a microwave safe bowl and heat for 60 seconds. Remove and stir until the chocolate is completely melted.
Notes
- This recipe can easily be halved and made in an 8×8-inch pan.
