Peanut Butter Oatmeal Bars are loaded with oatmeal and topped with a fudgy peanut butter topping that makes them ridiculously delicious! 


Units Scale


  • 1 cup butter, softened
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 1 cup creamy peanut butter
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 cups old fashioned oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt


  • 2 cups milk chocolate chips
  • 1 cup creamy peanut butter



  1. Preheat oven to 350º F.
  2. Using an electric mixer cream together the butter, both sugars and the peanut butter. Mix until light and fluffy.
  3. Add the eggs and vanilla and mix until combined.
  4. Add in the oats, flour, baking powder and salt and mix until just combined.
  5. Press into a 13×9 inch baking pan and bake for 20-23 minutes, just until the edges are barely golden. DON’T OVER BAKE!
  6. Remove from oven and let cool slightly.


  1. To prepare the topping place the chocolate chips and peanut butter in a microwave safe bowl and heat for 60 seconds. Remove and stir until the chocolate is completely melted.



  • This recipe can easily be halved and made in an 8×8-inch pan.
