These Peanut Butter Oatmeal Chocolate Chip Cookies are loaded with peanut butter, oats, chocolate chips, peanut butter chips and coconut. They are absolutely spectacular!


Units Scale
  • 1 cup salted butter, softened
  • 1 cup sugar
  • 3/4 cup brown sugar
  • 3/4 cup (heaping) creamy peanut butter
  • 2 large eggs
  • 2 teaspoons vanilla
  • 2 cups all purpose flour
  • 1 3/4 cups old fashioned oats
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 1/4 cups semisweet chocolate chips
  • 1 1/4 cups peanut butter chips
  • 3/4 cup sweetened coconut


  1. Preheat the oven to 350°. Line a cookie sheet with parchment paper.
  2. In the bowl of a stand mixer cream the butter and the sugars together until smooth, about 1 to 2 minutes.
  3. Next add the peanut butter and mix until combined and smooth. Add eggs and vanilla and mix until just combined.
  4. Add the flour, oats, baking soda, and salt, and mix until ingredients until just combined. Add chocolate chips, peanut butter chips, and coconut, and mix on low until combined.
  5. Use a large cookie scoop (about 1/4 cup of dough) to scoop cookie dough and place on prepared cookie sheet, putting 8 cookies per cookie sheet. Bake 9-10 minutes (cookies will still look underbaked – this is what you want. Do not over bake them!).
  6. Leave on cookie sheet for 2 to 3 minutes before transferring to a cooling rack.
