These Peanut Butter Oatmeal Chocolate Chip Cookies are loaded with peanut butter, oats, chocolate chips, peanut butter chips and coconut. They are absolutely spectacular!♡

- 1 cup salted butter, softened
- 1 cup sugar
- 3/4 cup brown sugar
- 3/4 cup (heaping) creamy peanut butter
- 2 large eggs
- 2 teaspoons vanilla
- 2 cups all purpose flour
- 1 3/4 cups old fashioned oats
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1 1/4 cups semisweet chocolate chips
- 1 1/4 cups peanut butter chips
- 3/4 cup sweetened coconut
Instructions
- Preheat the oven to 350°. Line a cookie sheet with parchment paper.
- In the bowl of a stand mixer cream the butter and the sugars together until smooth, about 1 to 2 minutes.
- Next add the peanut butter and mix until combined and smooth. Add eggs and vanilla and mix until just combined.
- Add the flour, oats, baking soda, and salt, and mix until ingredients until just combined. Add chocolate chips, peanut butter chips, and coconut, and mix on low until combined.
- Use a large cookie scoop (about 1/4 cup of dough) to scoop cookie dough and place on prepared cookie sheet, putting 8 cookies per cookie sheet. Bake 9-10 minutes (cookies will still look underbaked – this is what you want. Do not over bake them!).
