My husband and I were at the running store the other night. We were both looking for new running shoes. While my husband was talking to one sales clerk, I got talking to another one.
We started talking about gu’s (nasty stuff runners/cyclists use for energy, in case you didn’t know what they were) and I was telling her how much I hate them and that they make me gag when I try and choke one down. They are so thick and sicky sweet and I just struggle with them. I was asking her what flavors she thinks are the best and easiest to eat. She said the peanut butter flavor.
Peanut butter gu? Seriously?
Now you all know I love peanut butter, so I thought maybe this was a flavor I could get down without wanting to throw up.
I told her I’d never even seen the peanut butter flavor. She said it tastes like peanut butter popcorn.
Peanut butter popocorn? Really?
Naturally, my next question was “How do you make peanut butter popcorn?”
She told me she just makes the same mixture she uses when she makes scotcheroos, but instead of pouring it over Rice Krispies, she pours it over popcorn.
Yummy! How come I’ve never thought of that? I’ve made it before and poured it over a combination of Rice Chex, Kix and Rice Krispies and then ate it like it was popcorn, but I have never thought to pour it over popcorn. Of course I had to try it and it’s delicious. I’m sure it’s much better than a peanut butter gu, which I have yet to try, but I will soon.
So thank you to the girl at the running store for telling me about peanut butter popcorn.
Now I better go running!
- 1 cup sugar
- 1 cup corn syrup
- 1 cup peanut butter
- 2 bags microwave popcorn (I used light butter)
Pop popcorn and put in large bowl.
In medium saucepan, combine sugar and corn syrup. Cook over medium heat stirring constantly until sugar has dissolved.
Cook until mixture just barely begins to boil. Remove from heat.
Stir in peanut butter and mix until smooth.
Pour over popcorn and stir until popcorn is all coated.
