Is anyone else in disbelief that Christmas is four days away?!?!?
Ahhhh!
I haven’t wrapped any presents yet, I still need to make another batch of caramels and licorice caramels, make neighbor treats and I’m hosting a dinner at my house tonight and Wednesday night. . . Oh I really need another week or two.
Anyway, a couple weekends ago my friends and I got together for a dinner. everything was delicious, but one of my favorite things that night was this Pomegranate Avocado Salsa that my friend Heather brought. I happen to love pomegranates and I equally love avocados, so duh, of course I was going to love this. Oh my heck it’s so, so good and I ate way more than my fair share. I actually just started eating it without any tortilla chips.
This is such a great appetizer for the holidays because it just looks so Christmasy, don’t you think. I took this to my in-laws last night for our early Christmas Eve dinner and it was a hit! Everyone loved it and I know you will too.

Pomegranate Salsa

Description
This Pomegranate Avocado Salsa is made up of pomegranates, avocado tomatoes, green onions and a few seasonings that make this amazing and so fun for a change. Perfect and festive for the holidays!
Ingredients
- 2 Pomegranates, seeded
- 2 avocados, diced
- 2 to 3 tomatoes, diced
- 2 green onions, chopped
- 1 teaspoon salt
- 1 teaspoon coriander
- 1 teaspoon accent
- 1/4 teaspoon crushed red pepper ((adjust according to your taste))
Instructions
- In a medium bowl, combine all ingredients. Toss gently and chill for at least an hour before serving.
- Serve with tortilla chips.
- Store in refrigerator.
Notes
To deseed the pomegranate, I happen to have this cool little gadget that works like a dream. I’ve seen them at our local grocery stores for way cheaper than on Amazon, but I just wanted you to know what it looked like. If you don’t have the cool little contraption like I’ve got there are few different trick to get the arils out, just google it.
Also, I only use one green onion just because I don’t like the onion flavor to overpower everything else.
