  • 2 to 3 tomatoes, diced
  • 2 green onions, chopped
  • 1 teaspoon salt
  • 1 teaspoon coriander
  • 1 teaspoon accent
  • 1/4 teaspoon crushed red pepper ((adjust according to your taste))

  1. In a medium bowl, combine all ingredients. Toss gently and chill for at least an hour before serving.
  2. Serve with tortilla chips.
  3. Store in refrigerator.

To deseed the pomegranate, I happen to have this cool little gadget that works like a dream. I’ve seen them at our local grocery stores for way cheaper than on Amazon, but I just wanted you to know what it looked like. If you don’t have the cool little contraption like I’ve got there are few different trick to get the arils out, just google it.
Also, I only use one green onion just because I don’t like the onion flavor to overpower everything else.
