Hi friends!
I hope you all had a great weekend. Mondays seem to roll around so fast. This week’s meal plan is full of simple and completely delicious dinner ideas.
I’ve got some great recipes later this week for your super bowl party so stay tuned.
Have a great week.

Easiest pulled pork ever and absolutely delicious!
Tomato Bisque Soup
I posted this recipe over five years ago and if you’ve never made it you really need to. It’s one of my favorite tomato soup recipes ever. (Not sure why in the many, many times I’ve made this I’ve never retaken any photos. NOTE TO SELF: Make this soup and update the horrific, tiny photo ASAP! (1/31/17 – *Woo hoo, I updated the pictures!)
Cheesy Enchilada Rice Skillet

Sweet & Sour Meatballs & Family Favorite Rice
Double Chip Butterfinger Cookies
No Bake Brownie Batter Cheesecake
Hi Jodi!
What kind of pork roast do you use for the pork sandwiches?
Hi Hillary! I use the pork sirloin roasts from Costco. I just added that note to the recipe. I have used a pork shoulder roast before (boneless), but 99% of the time I use the roasts from Costco.
