Pumpkin Bars with Cream Cheese Frosting

Ingredients

Bars:

  • 1/2 cup canola oil (or vegetable)
  • 2 eggs
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 can (15-oz) pumpkin puree
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 heaping teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/8 teaspoon cloves

Cream Cheese Frosting:

  • 4 oz. softened cream cheese
  • 4 tablespoons butter, softened
  • 1 tsp. vanilla
  • 2 cups powdered sugar (or 1/2 cup more if you want it thicker)

Instructions

Cake:

  1. Spray a 9×9-inch pan with cooking spray, set aside. Preheat oven to 350 degrees.
  2. In a mixing bowl, combine oil, eggs, sugar, vanilla and pumpkin, mix until well combined. Add flour, baking soda, baking powder, salt, cinnamon, ginger, and cloves. Mix on low until just combined.
  3. Bake @ 350 for 25-35 minutes or until an inserted toothpick comes out clean.
  4. Cool completely. Then frost with cream cheese frosting.

Cream Cheese Frosting:

  1. Beat the cream cheese, butter, and vanilla together until smooth. Add powdered sugar and beat together until smooth.
