I was super excited about the post I had planned on sharing today, but my plans changed after my friend called me last week. Because of this whole coronavirus scare, and store shelves being wiped out, she told me I really needed to do a post that included recipes using pantry staples. So that’s what I’m doing and hopefully it will be helpful for some of you.
Everyone is kind of panicking right now, but honestly, I’m not. That doesn’t mean I’m not taking this virus scare seriously. It just means that I’m being careful, I’m washing my hands constantly, we’re staying in more than normal and I’m putting lots of faith and trust in the Lord. I know He’s more powerful than fear, so I’m keeping my thoughts centered on Him which is keeping my heart calm.
My Grandma Saley had a saying that she always said whenever times or life were hard. She told us to “trust oh trust” and that’s what I’m doing. I’m trusting in the Lord and also in the power of the human spirit. We can all help each other get through this♡.
Most of the recipes I’m sharing today use very minimal fresh ingredients. If they do, a lot of them are used just for garnishes which you certainly can leave off.
Also any of the soups and chilis that have meat in them, you can make meatless and they will still be delicious. If they call for peppers or onions, you can easily add extra spices to add flavor if you don’t have those on hand. Swap out garlic powder for minced garlic or onion powder for chopped onions, etc. If a recipe calls for cream and you don’t have any, use milk or even evaporated milk. It’s all about being creative and flexible here.
Pasta noodles are also something that you can easily swap out. If you need ziti and only have penne, then use that. If you need fettuccini noodles and only have spaghetti, it’s just fine. Are you catching on here? Pasta is easily something that you can make substitutions for.
I hope these recipes will help get you through the next few weeks. I saw an Instagram post yesterday that said “selfishness during a time of crisis is it’s own kind of virus. Don’t allow it to spread to you.” I LOVE THIS! I know times are stressful right now, but kindness and generosity during times like this will always be remembered. Be the one that reaches out and helps rather than the one that runs to more selfish places♡.
