Ingredients

  • 24 Ritz crackers, coarsely crushed
  • 10 eggs
  • 1/3 cup half & half
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 ounces grated sharp cheddar cheese
  • 4 ounces (1/2 cup) diced ham
  • 2 green onions, thinly sliced

Instructions

  1. Preheat oven to 450 degrees. Grease a 12-cup muffin tin with baking spray.
  2. In medium bowl, whisk together crackers, eggs, half & half, salt and pepper until well mixed. Stir in grated cheese, diced ham and green onions.
  3. Pour mixture into greased muffin tin (about 3/4 full). Bake for 8 to 12 minutes or until tops are lightly golden.
  4. These will “poof” up while baking, but will begin to fall as they sit for several minutes after being removed from the oven, so don’t be alarmed.

These will come out a littler easier if you use baking spray (cooking spray with flour in it) with rather than vegetable oil spray. No need to go buy baking spray if you don’t have any, just make sure you spray the tins really well. Before removing them from the muffin tin, run a knife around the edge to loosen the muffins.
