Crispy, crunchy, and oh-so-delicious, these Simple Beef Taquitos are easy to make and are sure become a family favorite! These are the perfect busy weeknight dinner!
How to make these taquitos:
- Cook the ground beef in a skillet.
- Stir in the taco seasoning, cream cheese, sour cream, salsa, and cheese.
- Place a few tablespoons in the edge of a tortilla and roll tightly.
- Spray with cooking spray and then finish with a sprinkling of salt.
- Bake, and enjoy with your favorite toppings!




What kind of tortillas are best?
I prefer using fajita size tortillas when I make taquitos. If you use larger shells you will probably get about 8 to 10 out of this recipe and will need to use a little more filling in each shell.
Can I use any kind of salsa?
Yes! Use your favorite homemade or store bought or homemade salsa for these taquitos. If I don’t use my homemade, then my favorite salsa to use the Mateo’s salsa that I buy at Costco.
Can I freeze these taquitos?
Absolutely! Carefully place them in a Ziploc freezer bag or airtight container. Freeze them for up to 3 months. Reheat them in the oven for best results. You can also reheat them in the microwave and then put them in a skillet to crisp of them up.

Baked: I am all about keeping things simple. Baking these taquitos instead of frying them keeps them healthier and incredibly simple to make. I like to spray them with olive or avocadao oil spray and then sprinkle them with some kosher salt.

We love dipping these in homemade Cafe Rio dressing. They’re also fabulous with some guacamole and sour cream on top. Go as crazy as you want with the toppings or keep it simple and eat them as is, no judgment here.

Ingredients
Ingredients:
- 1 pound ground beef
- 1 packet (1 oz) taco seasoning (3 tablespoons)
- 4 ounces cream cheese (full or reduced-fat will work)
- 1/3 cup sour cream
- 1/3 cup salsa
- 1 cup shredded pepper jack cheese
- 14–16 small tortillas (fajita size)
- Cooking spray (I use olive oil or avocado oil spray)
- Kosher or sea salt
Toppings (optional)

- guacamole
- cafe rio dressing
- cilantro
- grated cheese
Instructions
- Preheat oven to 425 degrees. Line a baking sheet with foil and spray with cooking spray.
- In a large pan set over medium-high heat, cook the ground beef until no longer pink, drain any grease.
- Stir in the taco seasoning, cream cheese, sour cream, salsa. Continue stirring over medium heat until cream cheese is completely melted and mixed in. Add the pepper jack cheese and stir until combined and cheese is melty.
- Place 2-3 tablespoons of beef mixture down one side of the tortilla, about 1-inch from the edge. Tightly roll up tortillas and place seam down on a prepared baking sheet. Spray taquitos with cooking spray and sprinkle lightly with kosher salt. Bake for 15-20 minutes or until ends start to get golden brown and crispy.
- Serve with favorite toppings.
