Slow Cooker Chicken Caesar Wraps

Ingredients

  • 3 pounds boneless skinless chicken breast halves
  • 2 1/2 cups chicken broth
  • 1 1/2 cups creamy Caesar salad dressing (plus more for drizzling)
  • 3/4 cup shredded Parmesan cheese
  • 1/3 cup minced fresh parsley
  • 3/4 teaspoon pepper
  • 6 to 8 flour tortillas or wrap of your choice (8 inches)

Toppings:

  • Chopped or shredded Romaine lettuce
  • Caesar flavored croutons
  • Cooked & crumbled bacon
  • Extra Caesar salad dressing

Instructions

  1. Place chicken breasts in slow cooker and season lightly with salt and pepper. Pour chicken broth around the chicken breasts and cover and cook, on low 3-4 hours or until a thermometer inserted in chicken reads 165°.
  2. Remove chicken and discard all but about 1/2 cup of the cooking juices, set juice aside. Shred chicken with 2 forks and return to slow cooker. Add some of the cooking juices if the chicken seems too dry.
  3. Add the Caesar dressing, Parmesan cheese, parsley, pepper and red pepper flakes and stir until combined. Cook on low for about 15 to 20 more minutes, or until heated through. Serve in tortillas or wraps with chopped Romaine, croutons, crumbled bacon and additional shredded Parmesan cheese. Drizzle with more dressing if desired.
