These delicious Snickerdoodle Rice Krispie Treats are the bomb! They start with browned butter, have extra marshmallows and are topped off with cinnamon sugar! Seriously one of the best no bake treats you’ll ever make!
It’s safe to say that while we were in Disneyland we ate plenty of churros . . . we love them! At one of the food carts we found a cookies & cream churro that came with a small cup of a frosting w/ cookie bits to dip the churro in. Seriously amazing and worth the extra money!! (FYI, I could buy an entire case of 65 churros from Sam’s Club for the cost of about 10 churros from Disneyland😂 . . . I’m just sayin’.)
Anyway, while we were standing in line for a ride one day, I was scrolling through Instagram and saw this recipe for Snickerdoodle Rice Krispie Treats.
I knew immediately I would be making these as soon as our plane touched down because (a) it is a Rice Krispie Treat and (b) the tops are covered in cinnamon sugar (ahem . . . just like churros!). How could you possibly go wrong with a gooey Rice Krispie treat generously sprinkled with cinnamon & sugar.
Holy smokes these things are good!

I have loved Rice Krispie treats my entire life and thought nothing could ever be better than them. But then I made these Browned Butter Peanut Butter Rice Krispie Treats and they completely won over. Now you throw these Snickerdoodle Rice Krispies into the equation. . . I am at a complete loss when it comes to choosing a favorite.
These start with browned butter which takes everything to a whole new level, right? Then you throw in marshmallows, cinnamon and vanilla and then Rice Krispies and even more marshmallow.
Ahhh. . . . these are so dang good!

HOW TO MAKE SNICKERDOODLE RICE KRISPIE TREATS
- In a large pan melt and brown the butter over medium low heat. Once butter is a beautiful amber color, add in the marshmallows and stir until melted.
- Remove from the heat and stir in the vanilla, cinnamon, salt. Next throw in the Rice Krispies and some extra marshmallows. Stir just until evenly coated.
- Press into a buttered 9×9 pan and sprinkle with more cinnamon & sugar. Let them cool and then dive in.
These things might just be the next best thing to eating a churro from Disneyland.

Snickerdoodle Rice Krispie Treats

These delicious Snickerdoodle Rice Krispie Treats are the bomb! They start with browned butter, have extra marshmallows and are topped off with cinnamon sugar! Seriously one of the best no bake treats you’ll ever make!
Ingredients
- 5 tablespoons butter
- 10 cups mini marshmallows, divided
- 1 teaspoon vanilla
- 1/4 teaspoon kosher salt
- 1 teaspoon ground cinnamon
- 6 cups Rice Krispie cereal
TOPPING:
- 1/4 heaping teaspoon ground cinnamon
- 3 tablespoons granulated sugar
Instructions
- Butter a 9×9 pan and set aside.
- In a large saucepan over medium-low heat melt butter. Once the butter is melted continue to cook it until it bubbles and begins to brown, stirring constantly. Once the butter is an amber color add 8 cups of the marshmallows and stir until melted.
- Remove from the heat and stir in the vanilla, salt and cinnamon.
- Add the Rice Krispies and the remaining 2 cups of marshmallows and stir just until evenly coated (the extra marshmallows you add should stay somewhat whole).
- Pour the mixture into the prepared pan and press evenly. Sprinkle with the cinnamon sugar topping. Let cool before cutting.
TOPPING:
- Mix together the sugar and cinnamon and sprinkle onto the Rice Krispie treats evenly.
