If you’re like me and struggle with side dishes, then this Swiss Corn Bake is going to become your new BFF. My mom found this recipe years ago (I’m pretty sure she got it from a recipe card at a grocery store). It’s been a family favorite from the first time she made it.
This is a simple recipe that takes a bag of frozen corn to a whole new level. It literally takes less than 10 minutes to put together and then bakes for about 25 to 30 minutes. Easy peasy my friends.

I made this a couple years ago for one of the annual Christmas dinner I host with some friends, and it was a huge hit. One of my friends asked for the recipe and she makes it.
It’s a really nice change of pace from boring frozen corn that you probably usually just cook, drain and throw some salt and pepper on.
Can I use canned corn?
Good question. I’ve never made this with canned corn, but I’m guessing you could. I would just be sure and drain the corn really well. Personally I love frozen corn more than I do canned corn which is kind of funny because it used to be the other way around.

Can I make this ahead of time?
Yes you can. Just put it in your fridge until you’re ready to bake it. It will require a few extra minutes of baking.

Swiss Corn Bake

Ingredients
- 4 cups frozen corn (or 2 10-oz pkgs.)
- 1 egg
- 3/4 cup evaporated milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 cups shredded Swiss cheese
- 2 tablespoons finely chopped onion
- 1 cup bread crumbs
- 2 tablespoons butter, melted
Instructions
- Preheat oven to 350°.
- Place frozen corn in a colander and run hot water over it. Set aside.
- In a medium bowl, whisk together the egg, evaporated milk, salt and pepper. Stir in the corn, cheese and onion.
- Transfer to a buttered shallow baking dish (about 1 1/2 to 2 quarts in size).
- Toss bread crumbs with melted butter and sprinkle over corn mixture.
- Bake, uncovered, about 25 to 30 minutes or until golden brown and heated through. Let stand for 5 to 7 minutes before serving.

Hi Karen, not a silly question. I think I’ll take off the word “soft” because it really is just normal bread crumbs, not Panko which are definitely a “crunchy” breadcrumb. This is so good, you’ll love it!
Question: bread crumbs, are these store bought kind or make my own from sandwich bread?
Either one is fine! I’ve done it both ways.
How long are the leftovers good for
This will last a good four to five days in the fridge and still taste delicious when reheated.
Does this freeze well?
If not can I make it up a day before needed and not bake until next day, I’d add the bread crumbs right before I bake?
Traveling to see family and want to make ahead of time.

Hey Theresa, I haven’t ever frozen this so I’m not sure how well it would freeze. But yes, you could definitely make it a day ahead and put the bread crumbs on right before you bake it.
