1 cup + 2 tablespoons flour
1/2 cup brown sugar
1/2 cup butter melted
2 large egg yolks
1 can (14 oz) sweetened condensed milk
1/4 cup fresh lime juice
zest of one lime
1/2 cup white chocolate chips
1/2 cup shredded, sweetened coconut
Toasted coconut for top (optional)

1 lb. extra lean ground beef
1 tablespoon chili powder
2 teaspoons ground cumin
1 tablespoon garlic powder
1/2 tablespoon maple syrup
3 tablespoons green chiles, canned
1/3 cup water (or more if you want your meat “wetter”)
1/8 teaspoon salt
1 lb. mini bell peppers, halved
olive oil cooking spray
salt and pepper, to taste
1/2 cup white onion, finely diced
1 cup shredded cheddar cheese (or any kind)
fresh cilantro, minced
1 ripe avocado, (small to medium size)
1 to 2 tablespoons lime juice (I start with 1)
2 tablespoons plain Greek yogurt
2 to 5 tablespoons water (or more to get the consistency you want)
Salt & pepper to taste

6 ounces (170 g) bittersweet chocolate, chopped into bite-size pieces averaging 1/2 inch with some smaller and some larger
