Slow Cooker Mango Peach Salsa Chicken Tostadas might be one of the tastiest dinners to ever come out of your slow cooker. Minimal prep work for a fantastically delicious dinner!

Ingredients:

3 boneless, skinless chicken breasts
Salt & pepper
1 teaspoon cumin
1 teaspoon smoked paprika
1 cup Mango Peach Salsa, see notes
1/2 cup packed brown sugar
1 can refried beans, heated
Tostada shells
Grated colby jack cheese (or any cheese you like)
Shredded lettuce
Extra mango peach salsa
Cheese
Cafe rio dressing
sour cream
Avocado

1/8 teaspoon salt
1 lb. mini bell peppers, halved
olive oil cooking spray
salt and pepper, to taste
1/2 cup white onion, finely diced
1 cup shredded cheddar cheese (or any kind)
fresh cilantro, minced
1 ripe avocado, (small to medium size)
1 to 2 tablespoons lime juice (I start with 1)
2 tablespoons plain Greek yogurt
2 to 5 tablespoons water (or more to get the consistency you want)
Salt & pepper to taste
