Breakfast food is always a favorite at this house. Waffles, french toast, pancakes, scrambled eggs, breakfast casseroles/burritos. . . we love it all and have breakfast for dinner on a regular basis.
This Tater Tot Breakfast Casserole was love at first bite for all of us.
It’s made an appearance more times than I care to admit since finding the recipe last December. I wanted so badly to share it back then, but it kind of took a back seat to those holiday recipes that had to be shared.
We are in love with this casserole and why wouldn’t we be? It’s loaded with eggs, sausage, cheese and tater tots (definitely the star of the show here!).This can be eaten plain or garnished with your favorite toppings. I love to top mine with sour cream, salsa and avocado–yummy! Then there’s Parker who eats his plain (the kid is so unadventurous!). If Braydon was home, he would squirt ketchup all over the top of his.

CAN I MAKE THIS BREAKFAST CASSEROLE AHEAD?
I have yet to make this ahead of time, but you certainly could. It will change the texture of the tater tots because they will break down after soaking in the egg mixture for awhile. But I am sure it will still taste amazing!
A FEW OPTIONS AND TIPS FOR MAKING THIS CASSEROLE:
- If you’re not a fan of sausage, you can use bacon or chopped ham in place of the sausage. You could also leave the meat out and load it with veggies.
- If you want a casserole with no heat or kick to it, then try using a different cheese. I think cheddar cheese, colby jack, Monterey Jack or sharp are great options. We do love it with the pepper jack though.
- Make sure you bake this uncovered, you want the tater tots on top to crisp up.
You guys are going to love this, I promise! I think I can honestly say it is the best breakfast casserole I’ve ever had.

Ingredients
- 1 pound ground mild pork breakfast sausage
- 1 (28-32 ounce) bag extra-crispy frozen tater tots, thawed and divided
- 2 1/2 cups shredded pepper jack cheese
- 10 large eggs
- 1 1/2 cups whole milk
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
Garnishes:
- Chopped green onion
- Sour cream
- Salsa
- Avocado
Instructions
- Spray a 13×9-inch baking dish with cooking spray.
- In a large nonstick skillet, cook sausage over medium heat, stirring occasionally, until browned, 5 to 7 minutes. Spoon sausage mixture into prepared pan. Add 2 cups tater tots and 1½ cups cheese, stirring to combine.
- In a large bowl, whisk together eggs, milk, mustard, garlic powder, red pepper flakes, salt, and pepper. Pour egg mixture over sausage mixture. Arrange remaining tater tots over filling.
- Preheat oven to 400°. Bake until golden brown and set, about 35 to 40 minutes or until center is set. Sprinkle with remaining cheese. Bake until cheese is melted, 5 minutes more. Let stand for 10 minutes before serving. Garnish with green onion and pepper, if desired.
