Turkey Ranch Chili

Ingredients

  • 1 pound lean ground turkey
  • 1/3 cup chopped onion
  • 1 cann(10 oz) Rotel tomatoes
  • 1 can (14.5 oz) fire roasted tomatoes
  • 1 package dry ranch dressing (3 tablespoons)
  • 1 can (15 oz) pinto beans, undrained
  • 1 can (15 oz) kidney beans, undrained
  • 1 can (15 oz) black beans, undrained
  • 1 cup frozen corn
  • 2 cups chicken broth, see notes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 2 tablespoons brown sugar

Toppings:

  • Fritos
  • Grated cheese
  • Sour cream
  • Cilantro
  • Avocado

Instructions

  1. In a large pot brown the ground turkey and onion over medium high heat. Drain any grease/liquid.
  2. Add the rotel tomatoes, fire roasted tomatoes, ranch dressing mix, pinto beans, kidney beans, black beans, corn, chicken broth, chili powder, cumin and brown sugar.
  3. Bring to a low boil and reduce heat to low and simmer for 2o minutes, stirring occasionally.
  4.  Garnish with toppings of your choice.

Notes

  • If you want a thinner/runnier chili, then feel free to add more broth.
