My weekly menu plans are a collection of delicious dinner recipes, side dishes and a few desserts that will hopefully offer a little dinner inspiration and help make your week a little smoother one recipe at a time.
Happy Friday! It’s nice to be back to a somewhat normal routine and posting my weekly menu plans again. Did you miss them as much as I did? There are so many good things on this week’s menu, but the thing I think I’m most excited about is the pot roast.
Growing up, the thing my mom cooked most of the time for our Sunday dinners was a roast with mashed potatoes and gravy. So any time I cook a roast on Sunday, I can’t help but think of my childhood Sunday dinners. It’s total comfort food. But instead of putting gravy on our roast, like I’m sure most people do, we would put my mom’s homemade green tomato relish.
Yes, I said green tomato relish!
It’s the best stuff ever and everyone one of my siblings would agree. I know it might sound a little weird or even gross. In fact, I’m sure all of our spouses thought that until they tried it. You guys, it’s the best and even most of our kids love it too (yes, even my boys!).
I clearly remember walking into our house many times when my mom was making it and getting a huge whiff of it. The smell is undeniable and permeates every inch of the house. Our house would smell like it for a day or two after my mom made it.
Several years ago my mom started making excess batches of it in the fall and giving us all several bottles of it at Christmas. (FYI, best present ever)! It’s hilarious to watch my siblings stock pile it. I think it’s one of the things we all look forward to more than any other gift at Christmas. (*Side note, if I would have had a jar of it when I took this photo years ago, it would have had green tomato relish on it instead of gravy -lol!)
So many other good things for the week. We’re headed to Disneyland next week and I’m so excited. I’ve got posts ready to go, so be sure and check back next week for two new recipes and another menu plan. Have a great weekend!
