Hey there, happy Friday my friends. I hope you’ve all had a great week.
Things here in Utah are beginning to reopen and I couldn’t be happier about it. I am so ready for life to get back to normal. It feels like our lives have been on hold long enough. It’s time to stop being fearful and start living again.
I’ll continue to be careful and will practice social distancing, but I really, really want to go shopping at TJ Maxx or any where other than a grocery store (haha).
So many good things on this week’s menu. If you’ve never made the cheesy potato pancakes, you’re missing out. I love fixing them as a main course every now and then when I’m tired of beef or chicken. Serve them with some fruit, a salad or fresh veggies and it’s the perfect meal. Oh and the Mississippi Mud Cake is amazing and a must make! It will make any lousy day better!
